  1. Begin by crushing your Lotus Biscoff Biscuits into fine crumbs. You can achieve this easily by placing them in a zip-top bag and using a rolling pin to crush them. Alternatively, pulse them in a food processor until they reach a fine crumb consistency.
  2. In a mixing bowl, combine the crushed Lotus Biscoff Biscuits with the cream cheese and Lotus Biscoff Spread. Use a spoon or spatula to thoroughly mix everything together until well combined and smooth. The mixture should be thick, almost like a paste.
  3. Once the mixture is well combined, use your hands to roll it into small truffle-sized balls. Place the truffle balls on a baking tray lined with greaseproof paper. Let the truffles set in the fridge for at least 30 minutes.
  4. While the truffles are chilling, melt the Sephra White Belgian Chocolate.
  5. Once the truffle balls are firm, remove them from the fridge. Using a fork or dipping tool, dip each truffle into the melted white chocolate, ensuring it is completely coated. Allow any excess chocolate to drip off before placing the coated truffle back onto the greaseproof paper-lined tray.
  6. I finished the truffles off with a sprinkle of crushed Lotus Biscoff Biscuits, then put back into the fridge to allow the chocolate to set completely.
  7. Once the chocolate coating is set, your Biscoff Truffles are ready! Serve them and enjoy – I don’t think they will last very long!
